- 2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips, melted
- 1 cup heavy cream
- Chocolate shavings and whipped cream for garnish
Instructions
1. In a bowl, mix together chocolate cookie crumbs, granulated sugar, and melted butter until well combined. Press mixture into the bottom of a 9-inch springform pan.
2. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
3. Gradually add melted chocolate to the cream cheese mixture, beating until fully incorporated.
4. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the chocolate cream cheese mixture.
5. Pour the filling over the prepared crust and smooth the top with a spatula.
6. Refrigerate cheesecake for at least 4 hours, or until set.
