today I decided to prepare a very simple tomato soup with vegetables and rice. Sometimes we like to eat light meals for dinner and soups are always a good idea. They are delicious and make your belly feel nice and cozy.
- vegetables (celery, carrots, parsley root, leek)
- 200-300g rice
- tomato puree
- canned tomatoes
- coconut milk (2/3 spoons)
- Himalayan salt, pepper, garlic and herbs (dill, oregano, parsley)
I love simple and delicious recipes. When I lived in Oslo, I was very conscious about spending money and I learned to prepare dishes that I could eat for two or three days. I was very creative with ingredients and sometimes I was shocked about the low cost of some the meals I was preparing. This tomato soup is a great example. It’s not only cheap but also easy to prepare, delicious, filling and vegetarian. :) You should try it!
