Curry bulgur with vegetables and chickpeas

Good morning everybody,

yesterday I decided to prepare delicious bulgur with curry, vegetables and chickpeas. The dinner was very filling and delicious.

INGREDIENTS

  • bulgur wheat (1 cup)
  • chickpeas (1 can)
  • 1/2 onion
  • 3 garlic cloves
  • 1/2 fresh ginger
  • 10 mushrooms
  • 1 broccoli
  • 1 red and green pepper
  • 1 squash
  • fresh basil
  • 4-5 sun dried tomatoes
  • majorcan/oregano/parsley herbs
  • Himalayan salt/pepper/ginger/curry/turmeric/cumin/paprika/garlic
  • olive oil

INSTRUCTIONS

Cut onion, garlic and fresh ginger into squares and fry it all using olive oil. Add mushrooms, sun dried tomatoes, squash and red/green onion to the frying pan. Then boil bulgur grains for about 20 minutes together with curry  (once it’s ready, mix it with the vegetables). Next add washed chickpeas, broccoli, spices, fresh basil to everything, mix it all together.

It is a delicious and healthy meal that you can prepare in less than an hour. We love eating it for dinner because it fills us up very quickly and we stay full until the end of the day. At the same time, we provide our bodies with necessary nutrition. Bulgur wheat and chickpeas are a good source of protein and fiber, iron, magnesium and vitamin B-6.

      it few months ago for the first time.. i was shocked 😻
