yesterday we felt like eating something lighter and I decided to prepare a nice and easy salad with quinoa and chickpeas. Lately I’ve been using a lot of fresh herbs when cooking and at the moment I’m obsessed with parsley and basil.
Chickpeas are a good source of protein, carbohydrates and fiber. Like other legumes, such as beans, peas, and lentils, chickpeas they contain several key vitamins and minerals (zinc, vitamin K, magnesium and calcium).
Quinoa is very nutritious as well. It is very high in fiber, protein with all the essential amino acids and gluten free.
- fresh green salad
- fresh parsley and basil
- celery stalk
- bianco balsamico
- olive oil
Sauté the vegetables cuts in the bowl. Then boil quinoa for about 20 minutes (once it’s ready, mix it with the vegetables). Then add washed chickpeas, spices, fresh parsley & basil, olive oil and bianco balsamico. :)
PS I forgot to add one shredded carrot, so if you feel like adding a bit extra colour and flavour to your salad – go for it. The carrot gives a nice and sweet touch to the salad.
